So I made stock this weekend
. In my gargantuan stock pot from IKEA. I put a chicken from TJ's that was pasture fed, organic. I threw in a bunch of veggies, garlic, parsley, zuch's. etc.

IT. WAS. SO . GOOD.


I have a ton of stock now. It is yummy. I used some in a potatoe leek soup, making veggie rice with chicken, and killer chicken quesadillas.

I think I like this stock-making thing. I even liked how easy it was to peel the meat off after. I HATE touching meat. So this was such a relief!!!! I can't wait to try some with beef!

I had stock a lot when I was young, but didn't make it for many years when I got out on my own. When I got back into making stock, my first stock was from the leftover Thanksgiving turkey and the next two stocks were a few months later from the extra turkeys I bought at Thanksgiving cause they were on sale. The first time I made chicken stock after the turkey stocks, I thought I did something wrong. Turkey stock is so YUM!!! Much more rich in flavor and makes an awesome instant soup with little effort.

I haven't made stock since ds was a toddler.

: He starts K in two weeks. It is on my to do list for this fall!
But isn't it great? I love, love, love beef stock too, and the NT book has a great pesto soup recipe with beef stock.

FWIW, I freeze any stock I won't be using immediately. I freeze it in 1 qt ziplocks and then can pull it out whenever we need soup.
