So, I love the almond butter at the HFS, but would rather use crispy almonds and not spend $17 a jar. I've tried the recipes in NT, but don't like the unspreadable product due to the EVCO and need for refrigeration. When I make it with just the raw spanish almonds it never has a smooth consistency, but crumbles instead. I'm guessing it's the food processor I use instead of an expensive nut grinder. Has anyone found a way to make a smooth almond butter without shelling out at least $500 for a quality nut grinder?

If you have a good grinder please let me know the make and cost. Everything I've looked at is at least $600.

Almonds are really too hard for the average FP or blender to make good butter with. You can do it with pretty much any other nut, but almonds require more power/friction.

If you can handle them, you can try adding macadamia nuts or brazil nuts to the almonds... they break down more easily (are softer) and they have a higher oil content, so they can take the place of the CO. But either one goes rancid fairly quickly at room temperature (as do almonds), which is the trade off.
