We all like Alice Waters' buttermilk mashed potatoes recipe - my internet connection is bad, but it's in the Art of Simple Food. I'm a little unsure what you're looking for though, as my toddler eats the same food we do - is there something that in your case would make it specifically for kids?

My basic mashed potato recipe: boil potatoes in large-ish chunks until soft (but not mushy). Drain. Add butter (sour cream works too), a splash of whole milk or cream, salt and pepper if desired, and mash until smooth.

You can amend as desired...I sometimes add cheese; you could make green mash by adding pureed spinach or broccoli or something. et cetera.

DD has few teeth and her gum is not strong enough to chew our food, so I always have to mince her meat. Everytime she eats my rice and meat, she gets constipation.
But she hates soft and smooth food (what a picky one!), that's why I asked a good potato recipe.
Btw, do you guys give your LO pepper?

Yes, I give my lo pepper - and peppers, he can stand pretty spicy stuff. But he also eats raw garlic, so he's not exactly the norm.

Since you're little one doesn't like soft, smooth food, you might want to try not peeling the potatoes - that gives a bit more texture, I really like it. You can use buttermilk in the above recipe that was given as a substitute, as well. When you boil the potatoes - and you should use a kind like yukon gold or similar - cut them into chunks, put them in the water while still cold with some salt, and let everything come to a boil together. Once it's boiling it should only need to cook for around 10 minutes, depending on your potatoes.
