Any ideas on what to do with my very prolific mint? It's taking over my backyard. I made mango mint salsa, and mint tea. I need ideas, I hate to let it go to waste. Thanks!

Mint jelly? Or some sort of mint chutney?

You could always dry the mint, to use for tea in the future. Or for aromatherapy sachets for holiday gifts...gee, can you tell I'm really stretching here?!? :LOL

Or you could try the old zuchinni trick...leave little bundles of mint on all your neighbors' porches in the middle of the night!
