Someone recently posted about mixing coconut oil into their nut butters to add in some of that yummy fat, and I wondered if anyone wanted to share their methods/ratios? I think it would make me feel a little happier about my little one's peanut butter and jelly sandwiches

What about making your own nut butter in the blender/food processor with softened coconut oil. I hadn't thought of adding CO to the nut butter. But, I love your idea!

I've noticed a lot of shelf-stable peanut butter is solidified with palm oil now. I'm sure you could do the same with CO.

I make my own nut butters per NT. Don't remember the exact amount, and my book is in the storage. but i think it's about 2 cups of nuts and 1/2 C of CO, some salt and honey.
I love using soaked cashews for nut butters.

I often make apple or pear dip for my dd with 1 T nut butter, 1 t coconut oil, and 1 t raw honey.

I've often made the same for myself, subbing blackstrap molasses for the honey. Yum!

I mix some CO with DS peanut butter every day for his sandwhich. It makes it kinda runny, but he needs all the good stuff CO has in it.

i've made CO & almond butter balls--2 parts almond butter, 1 part co + honey or sweetener to taste, chilled and rolled into balls and then rolled in toasted coconut. got the idea from a thread in this forum, actually...

anyhoo, they are YUM.

Well, we did this! It is delicious and a big hit.

I took a new jar of peanut butter, about 2 cups. Added about 1/4 cup each of coconut oil and palm oil. Plus, about a tablespoon of raw honey and a tsp of vanilla. Mixed in food processor. It was rather thin. I poured it into a container; and put it in the refrigerator to cool and solidify for about 3-4 hours.

Then we scooped out balls (a melon baller would help), and rolled them in unsweetened coco powder. Ds ate 4-5 of them. Probably about 1 Tbs. of oil. Woo-hoo!

I noticed that our peanut butter has palm oil added. But, I doubt it is raw, unrefined, etc.
