I used to know someone who blended butter with olive oil to a consistency she could keep in the fridge for spreading easily. Does anyone know the proportions? And doesn't olive oil solidify when chilled - how does this work exactly?
Olive oil will definetely solidify if in the frig, it doesn't get completely solid just very goopy, like the consistency of go-jo.
As for proportions I would try 2 parts butter to 1 part olive oil at first, & if it isnt as soft as you want you can always add more olive oil.
