So I think I just made this up today:

1 packet gelatin, dissolved in 1/4 cup boiling water
1 cup coconut milk
2 drops liquid stevia

Stir all, set in glass pan and chill. That's it.

Yum.

I need to do this for DS. Over the last two weeks we've had to take him off cow dairy (I thought I was doing good by only allowing raw in the house) and gluten. He needs a nice snack.

Oh, I use the Knox gelatin packet. It is probably about a Tablespoon.

Agave would probably work just fine in it. I have to use stevia since I am on an anti-candida diet. I would definitely dress it up with fruit as well if I could.
It is one of my few treats I can since I'm intolerant to dairy, eggs and am on an anti-candida diet.

I think next I'll try doing a chilled pumpkin pie type pudding, just adding pumpkin puree, spices and a bit of real vanilla bean.

It is! I eat it almost every day now as my one sweet treat hehe.

can one use another sweetener? I really don't like the taste of stevia.

I used to go to this Brazilian restaurant in Japan that served this. It was out of this world delicious!! That was like 8 years ago and sometimes I still think about it.....thanks for the idea!

Tonight I just made some with honey, blueberry "juice" (blueberries in my vitamix) and coconut milk. I jelled the coconut milk with whole blueberries sprinkled around then when mostly set I poured over the blueberry juice. I'm a fuss when it comes to things looking purty lol
