How about Briar Rose? It's not totally original, but I love the sound.

Or......

I automatically put "Rose" after "Briar"! I think it's because my sister's favorite Disney character is Aurora, aka Briar Rose, aka Sleeping Beauty. Her favorite Disney trivia question is "Which princess is known by 3 names?" :LOL

In that vein, how about Briar Aurora?

I'm a fan of combining more unusual names with more traditional ones, how about:
Briar Cassandra
Briar Liane
Briar Allena
Briar Seraphina

Have fun choosing!

Wow! Briar was the name we had chosen for our first, but he turned out to be a boy. We were going to use Briar Mary. Mary is a family name and, as it turns out we just named our new one Mary. I still love Briar though! Incidently, Rose is our second DD, Briar and Rose being pretty much the same thing! Briar was on the list for all three kids but somehow, it always seemed to belong to ds Oscar, even though he's a boy. I have never heard of anyone else using that name.

Also, another vote for the traditional Briar Rose, it's an automatic pair for me.

If we'd had a girl, we were going to name her Lorinda. I think Briar Lorinda sounds pretty nice...unless your last name has a lot of syllables.
