Good Morning!

Well, my BIL just left after having dropped of the "things" that my 18-yr old nephew will need while living with us.
:

Really...we ARE excited for our nephew to come live with us! :) One thing that his dad said while he was here is that said nephew EATS and EATS! And one "rule" that we have laid down is that I will not cook two meals. He eats what I cook.

BIL said that nephew does like to eat healthy and that a "normal" breakfast for him will be something like 2 waffles, 4 eggs and sausage.


Breakfast will be simple (eggs adn sausage and stuff)....but what ELSE do I make that won't make the grocery budget go through the ROOF! We are "trying" to eat as much of an NT-diet as possible (for my health).

Any ideas??????

As far as meats, I would go with things like whole chickens, pot roast cuts, ground beef, etc. You can easily throw these in a crockpot or oven. I would stretch the meat by adding root veggies and making stews and make chili or tacos out of the ground beef. A simple meal would be two small/medium chickens, some root vegetables, mashed potatoes, side of veggies, and side of grains (if you eat grains). Even where I live (DC metro area), that should run about $20 and should be enough to feed several people for dinner and still have leftovers. Chicken leftovers are great for broths and chicken salad. Look into bean recipes -- they are very filling, hearty, nutritious, and very inexpensive especially if you stick to buying it dry instead of canned.

You can make a meal more filling with the sides and additions you provide. Huge sides of mashed potatoes or a good hunk of homemade bread with butter will go a long way. You can adjust your own meal easily to your liking, such as making the taco shells for DH and your nephew but throwing the same fixings over lettuce for a taco salad for yourself. Provide things like shredded cheese and sour cream for meals (eg, over chili and spaghetti) to make them heartier.

I grew up with my mom making huge dinners and feeding lots of hungry people. First thing I would do is always have in the fridge enough stuff for them to make a sandwich. Like pre cut tomatoes in tupperware, lettuce, lunch meat, and cheese. Most times a huge sandwich is what they will eat for a snack. And try to keep fresh fruit on hand. Having healthy food around will really cut down on eating a lot of junk food which doesn't fill you up. For suppers think really filling. And try to have leftovers. Make a huge pot of chili with cornbread and honey. Spahgetti or lasagna with bread and a salad. Starchy foods can make you feel full faster. Mashed potatos are good and can be reheaten. For breakfast eggs are really cheap and its easy to make a pan of scrambled eggs vs. frying individually. Toast can be a filler and see if you can phase him out of the meats for breakfast. Bacon every morning or sausage will ruin a budget and isn't really healthy. But pretty much whatever you have laying around he will eat.
