Lately, whenever I go to the gym (in the early evening when DH gets home), it's been working out perfectly for me to make Honeybaked Lentils and pop them in the oven right before I leave, then they're ready shortly after I get home. (DH and DS are home while I'm gone)

Well, as much as we love Honeybaked Lentils, I'd love to have some other options that will work for this setup as well. We live close to the gym and my program is a quick one so I'm usually there and back in an hour - can make it in as little as 50 minutes if I really hustle and don't chit-chat. I'm an ovo-lacto veg and my husband is omni and VERY picky. He doesn't love a lot of vegetables but is pretty open to beans and grains. We both like cheese and eggs. As far as veggies, he likes spinach and white potatoes and will TOLERATE a few others but not mixed with anything. He even complains when I add diced carrots to my Honeybaked Lentils.

Thanks in advance if anyone has any recipe ideas to meet these super-specific criteria!

Are you looking for casseroles that bake for 1 hour plus? If you have others you like but they don't bake long enough you could try adding a bit of extra liquid, baking 25-50 degrees cooler and adding time? Does that make sense? Or use the timer on your oven to start it a bit after you leave?

I guess I could use some ideas here too. I will also make a big pot of something and it will stay warm enough for people to eat for a couple of hours. I may be dealing with bigger amounts of food as I am feeding lots of big eaters.

Would you mind posting how you do honey-baked lentils?

I use this recipe for Honeybaked Lentils. I use 2 tsp onion powder instead of dried minced onion, and I do add the 1/3 cup of rice. Sometimes I add diced carrots, but as I said before, my husband complains when I do LOL. It comes out perfectly when I bake it for 1h 15min at 350 - when I did it for an hour and a half it came out really dry. Lastly, even though the recipe says it makes 6 main-dish servings, we must be pigs because it just feeds the two of us for one meal (DS still doesn't eat much solids). DH is a big guy who works out a lot and I'm tiny but work out too and nursing makes me really hungry as well.
