I bought the Ultimate Uncheese Cookbook a few months ago based on recommendations here but I have not tried one recipe yet. Although the pictures look great, I'm kind of wondering if they'll taste any good - also which ones to pick. There are several mac and cheezes plus several versions of grilled cheez.

If you've tried any of these recipes, please tell me which ones you and especially your kids have liked.

That's a good idea, Pamered Mom - I was going to check that out more closely anyhow not that it is almost time for school to start.

I tried the Zucchini Calzones last night - I'm used to using tofu instead of ricotta so it seemed safe. I was planning to make the dough from scratch but ended up running late so stopped at TJ's and got 2 of their premade pizza doughs.

I doubled the recipe because I figured dh would want 2 calzones, and the recipe only made 4.

They came out good - except that I forgot to double the salt so it was a little bland. Everybody liked them and my dh did eat 2 - kids and I each had one.

I think next time I will puree the tofu with olive olive oil in my food processor to give it a creamier texture rather then just using the straight mashed tofu to mix with the herbs and veggies. (Actually dh suggested adding cheese but I reminded him the whole point of this was to not use cheese . . .)

I mentioned to my dh about the grilled cheez and mac and cheez recipes which look so good in the pictures - he didn't sound too enthusiastic about trying them - he's a cheese lover - and doesn't like substitutes. If anyone has tried those - please comment.

yeah, tofu as a cheese sub usually works out okay. glad it went well


and thanks twinmom! tell me the mac and cheeze is better than the boxed mac and chreeze!

oh, man, the mac & cheeze is SO GOOD, nothing like the boxed stuff. I actually dream about it sometimes!
Then I eat way too much of it, until I can't stomach the thought of it for a few months, and the cycle starts all over again.

Let me know how you like that mac & cheeze recipe. I feel invested in your experience now.


BTW, Cathe, I really enjoy your cookbook. At last count I have over 60 vegetarian & vegan cookbooks, stacked in a double row in my pantry. The ones on the outside are obviously the ones I use most; yours is always there!

Some of my favorites from the book are the Gee Whiz Spread (I have served this at a few dinner parties and omni's almost always ask for the recipe!), I use the Minute Man Cheeze Sauce ALL the time (I usually add a few of the extras), and the Colby Block Cheez (I love this!). I have also tried the Pub Fondue (a little too much of a beer taste for me, but I will make another fondue recipe again), the Chikpea Flour Pizza's were also good.

I keep going back to those same recipes over and over when I crave something cheesy, but I should try something else out. I have been wanting to try the Mac and Cheese recipes, so I can't wait to hear what others think...

She2dancer - I think I heard the Gee Whiz Spread mentioned on another thread too. So I'll try that one too.

I'll let you guys know when I try them.

All this talk has convinced me to buy this book...Not that I was a big cheese fan way back when but I adore trying new things. Anyone know if it has a recipe for Brie? 'Cause that is one thing I'd like to have again (sans torture, of course).
