There's a great on in veganomicon but I don't have it on hand right now. It's basically<br><br>
1/2 cup coconut cream<br>
1/2 pkg silken tofu<br>
3/4 cup sugar (I use about 1/2 cup though)<br>
1 cup soy milk (I've used almond and hemp with good results)<br>
1 tbsp vanilla (I use alcohol-free)<br><br>
It's <i>really</i> good.
I looked it up in the cookbook and it says to refrigerate the can of coconut milk over night and then just scoop the cream off the top in the morning - use the rest for soup or sauce or something later.<br><br>
I'm so excited to try this recipe, thanks for pointing it out to me, I already have the cookbook. I'm going to make it this Saturday for a birthday party!

It's usually in with the drink-mixers at the grocery store. It's used for pina coladas, so I guess that's why they keep it there. That section is usually near the sodas and such.
