We made the switch to vegetarian a couple of weeks ago but I'm stuck in a rut (already!). I have every cookbook under the sun and we are trying all sorts of new things. Dh and I like the stuff but I'm having a problem w/ my kids.<br><br>
I would love ideas and/or encouragement. I know we are doing this for the right reasons, I just need my kids to eat what I fix.

Wow! Good for you! Have you tried making some of your old favorite dishes with a veg instead of meat? Like, eggplant lasagne, or mushroom tofu and rice, big giant salads with sunflower seeds, garbanzos and homemade miso dressing, etc? I love mediterranean foods like couscous, lentils, tabouli, pita, tahini sauces, falafel, hummus, baked jeruselum artichokes, etc. Also veggie pizza? Grilled portabellos with fixin's on a bun and baked fries? Baked veggies with herbs?<br><br>
I have been a veggie for 8 years, and still get in a rut so don't feel odd!! In fact most of my omni friends get in ruts too....<br><br>
