New pseudo-veggie family - we're tired of stirfry. Dinner ideas?

About a month ago, we were reading some material that led us to decide to give up meat. If you need a label, we're ovo-lacto-pescatarians. No beef, pork or poultry. And we don't miss those things at all! But...

Sometimes I am lacking in the creative department when 5:00 comes around. And while it is healthy and tasty (and super easy with a rice cooker), stirfry is getting old.

I have about 4 blocks of extra firm organic tofu in the fridge and could really use some ideas as to what to do with it. Ideas that are not stirfry-centric, that is.

Can anyone help me out? Thanks in advance!

Ideas to use up your tofu:

Tofu "scramble" - use tofu instead of eggs and have breakfast for dinner!

Tofu tacos - I take the tofu and press the water out forst. Then crumble into a frying pan with peppers & onions and taco seasons (cumin, pepper, garlic, sea salt, paprika, etc) Fri it up and use as taco filling. The whole family loves this.

Cut the tofu into cubes, bread them and bake them in the oven to make "tofu nuggets."

Also, tofu and cheese quesadillas. Make the same as with the tofu tacos, but add cheese, mic tofu and cheese together and make quesadillas. I usually add some spinach to this as well.

You can also use tofu instead of ricotta in a lasagne.

I checked out some books from the library a few days ago because I got so tired of the "what's for dinner" angst that I went through. Here are some of the ideas and recipes I got:
Veggie kabobs
Corn Chowder
Anything mexican-tacos, burritos, echiladas, quesadillas
Anything italian-spaghetti, pasta, eggplant parmesan
Veggie wraps and sandwiches
Minestroni/Vegetable Soup with a big loaf of crusty wheat bread
Stuffed backed potatoes
Homemade Veggie pizzas

I have recipes for:
Meditteranean Wraps
Tortellni Soup
Penne With Zuchinni and Ricotta
Coconut Curried Veggies with Rice
Cajun Beans and Rice
Corn Chowder

ps.... I also have a totally drool worthy recipe for cheescake that is made with tofu if you want it... it is so yummy!!!!

you should really check out the "what's for dinner" threads. lots of great ideas in there.
I usually just make something with a lot of flavor or sauce and throw tofu in as needed. Things like:
pasta and sauteed veggies with tofu crumbled on top (or sauteed as well)
bean burritos with tofu thrown into the rice and beans. top with diced avacado, onion, tomato, greens...
We just finished our tofu for dinner. I sliced it, pressed the water out of it and lightly brushed olive oil on both sides, sprinkled with lemon pepper and baked at 400 degrees for 20 minutes. I flipped it and baked another 10 minutes. Served with some homemade tartar sauce (1/2 cup vegannaise, a tablespoon of pickle relish and a teaspoon of mustard). No kidding, this is one of my boys' absolute favorite meals!
