I'm eating one right now, and they are great! I got the recipe from an old LLL cookbook I scored at Value Village. Fabulous!<br><br>
Okay, recipe:<br><br>
1 apple, peeled and cored<br>
9 pitted prunes<br>
9 pitted dates<br>
2 small bananas<br>
3 eggs<br>
1/4 cup butter, softened<br>
1 t. vanilla<br>
1 t. salt<br>
1/4 cup orange juice<br>
1.5 cups whole wheat flour<br>
.5 cup sunflower seeds<br>
1 cup rolled oats<br>
.5 cup chopped walnuts<br>
1/3 cup dry milk powder<br>
2 t. baking powder<br>
1 t. baking soda<br>
1/3 cup unsweetened shredded coconut<br><br>
Blend the apple, prunes and dates. [I added the oj in here to facilitate easier blending.] Add bananas, eggs, butter, vanilla, salt and juice, and blend. In a bowl mix together the rest of the ingredients. Pour blender mixture over dry ingredients and mix well. Pour into greased muffin cups; bake at 350 for 20-25 minutes. Makes 1.5 to 2 dozen muffins.
