I'm trying to cut WAAAYYY back on the amount of refined sugar I eat, but I'm having trouble finding recipes for things like baked goods, muffins, cereal/granola, etc. that don't use sugar. The recipes I *have* found use an awful lot of oil, eggs, and/or butter.<br><br>
Does anyone have any favorite recipes to share?<br><br>

Sorry, no time to post any recipes but wanted to tell you that I just substitute honey or maple sugar for plain old white sugar, though I use about 1/2 as much. I haven't really noticed much difference in the taste. Some people say if you use honey you have to reduce the other liquids but I've never had to. Also, I use melted butter or coconut oil in place of yucky vegetable oils.

Thanks! I have been using honey and maple syrup where I need sweetener, although I'm trying use a little less of those, too. I did find some recipes for muffins and the like that use frozen juice, so I may try those.<br><br>

As far as sweetness goes, I've found that for every cup of sugar called for in a recipe, I can use 1/4 cup honey or maple syrup and it comes out sweet enough.

Good to know! I'm actually finding it easier to avoid/do without refined sugar than I had feared...<br><br>

Katy, I know this isn't exactly what you asked, but maybe in combination w/your other substitutions.... When I'm making muffins/banana bread/etc.. I use equal amts. of applesauce in place of the oil. Since applesauce has some sweetness, I bet you could also cut down on the sugar & add some honey instead. (Hmmm... Really? So, in a muffin recipe that calls for 1/2 cup of oil, you could use unsweetened applesauce instead, and it really works??<br><br>

My mom recently gave me a cookbook entitled "Sweet and Sugarfree, An All-Natural, Fruit-Sweetened Dessert Cookbook," by Karen E. Barkie. It's copyright 1982, so I don't know if it's in print anymore... Maybe the library or interlibrary loan would have it (my mom got it second-hand). There's a wide variety of recipes that look great and I can't wait to try them. It looks pretty comprehensive and includes a section with cracker recipes, jams/spreads, pancakes, and frozen fruit-type desserts. There's also some pretty good helpful hints, information, and reference charts listed in the back. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/orngtongue.gif" style="border:0px solid;" title="Stick Out Tongue">

Yup! The quick-bread that I make most is banana bread (always have brown bananas to use), and you can't even notice the difference. And yes, I also buy the unsweetened applesauce. The ratio is 1:1, so it's easy to remember.
