Anyone do the oatmeal recipe in NT? I have never soaked/fermented anything. I soaked it in 2 tbs. raw ACV and 1 cup water overnight and this morning added the water and salt. It is so vinegary.
I added my cinnamon and stevia and lots of butter and milk. The vinegar just overpowered it.
Can someone help?

Oats don't seem to bother anyone in our family so we just soak in rice or coconut milk overnight or longer. Sometimes I will use lemon juice as it is milder than vinegar. If you aren't dairy intolerant/allergic I'd try the yogurt soaking. For us soaking in just the milk seems to be fine, no stomach upset here.

So do you rinse them after you soak them or do you cook them as is? When you soak them in milk do you leave it out on the counter? Probably a dumb question but I've never done this.

I cook it without draining it, and yes I leave it on the counter. Actually you should put it in a warm spot. My spot is on top of the fridge. You are trying to build up lactic acid (?) and break down phytic acid for easier digestion. It won't hurt you or go bad. That's why the NT calls for soaking in whey or yogurt for those tolerant of dairy.

I soak with lemon juice then rinse and use fresh water. That helps the flavor significantly.

I usually use lemon juice but sometimes use vinegar and I choose to rinse the oats before cooking them to get rid of any residual smells or flavors. I've never had a problem - I just put them in a fine mesh strainer and give them a rinse, then cook as normal.
