Anyone made it? Any suggestions? My mom's giving it a try, but after letting it sit as long as the recipe suggests it's not done. I told her I'd ask around and see what I could figure out.

I just recently made some. It has not much of a taste though. Very mild, not really anything like a vinegar. I figured it would vinegar- up when I use it in a batch of cortido.

That's what she thought...she was expecting it to be more vinegary so she was going to let it sit for awhile longer. Let me know how it goes in your cortido. That's what she was planning on using it for.

Yeah, I may make it soon. Apparently my last batch was too salty. I guess I measured wrong!

We tried it last summer, but it grew strange little larvae. . .So we kind of watched it for a while ( like sea-monkeys <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/smile.gif" style="border:0px solid;" title="smile"> ) and then tossed it.

Let me know how it turns out, please! I haven't been able to compare all 3 recipes side by side yet- but I was going to try Sandor's next. . .When I tried and grew the little beasties I was going from Diana Kennedy's recipe in her book, The Essential Cuisines of Mexico. ( Everything else in this book BTW is FANTASTIC!!, If your a fan of real mexican food this book is a must for your collection, lots of good lard too, yum <img alt="" class="inlineimg" src="/img/vbsmilies/smilies/eat.gif" style="border:0px solid;" title="Eat">:~ )

Tried to make it, the pineapple rind got moldy the first couple times, finally figured out to use plastic wrap to hold it in the water. Hated it. Tasted like rotten fruit.
