i tryed to make cream cheese and whey using raw milk. NT does not say to cover or not to cover.<br>
so i used cheese cloth over a glass jar.<br><br>
after 3days, i checked and the top part of cream tasted funky and not cream cheese-like. the rest of it did not separate. it still look like milk.<br>
and taste +smells FUNKY!<br><br>
what did i do wrong?

Hmm...I can't awnser why it tasted and smelled funky, but I can say I had to squeeze excess whey out of the cream cheese to make it the right consistancy, so that part is normal. Also, I never covered mine.

It tastes better if you leave it in the fridge.
