Anyone have a good recipe for peanut/almond butter balls? You know, the kind with oats, dried fruit, nut butter, etc. that are so easy to take anywhere? The kind kiddos just eat up like crazy? The kind that are so yummy my husband will eat three for breakfast?

I tried just winging it and it didn't really work out - they were so crumbly. Ideally, i'd like to make them without baking them since we are planning an 8 week road trip and i wont' have an oven.

The only peanut butter balls I'm familiar with involve a lot of powdered sugar and chocolate. I'm guessing that's not what you're looking for.

yup...looking for something more healthy - nuts, seeds, dates - that sort of thing. I'm sure if I tried it again, i could come up with something that works. Just wondering if there is some sort of "secret ingredient" to make them not so crumbly.

Dandy Candy

1 cup peanut butter
1 cup dry milk powder
1/2 to 3/4 cup honey
1 tsp vanilla

Optional additions:
1/2 cup carob powder or 1 cup granola, rolled oats or puffed cereal
1/4 cup nuts, chopped or seeds. coconut, wheat germ, sesame seeds
1 to 2 Tbs. water if mixture is too crumbly

1. combine peanut butter, milk powder, honey and vanilla in bowl.

2. mix with fork or spoon until ingredients are well blended.

3. for fudgy candy, add carob powder.

4. for chewy candy, add granola or oats.

5. for crunchy candy add puffed cereal. These are a little harder to roll, so you may prefer to pat this mixture into a pan.

6. chop nuts if oyu like.

7. shape into balls or a log. Roll in coconut, wheat germ, sesame seeds or a combination of all three.

8. cover or wrap in plastic wrap and put into refrigerator to chill for about an hour.

If you made logs, slice into bite size bits after chilling.

Pretty much as above except I don't really measure and don't add vanilla.
Peanut butter, honey, powdered milk, then add whatever you want. Form in balls or logs. Can add some melted chocolate. Either mix in flaked coconut or roll in coconut when done. Can make these in about 10 min. Usually refrigerate. I call these "power bars".

mine are similar. I use pb, honey, dry milk powder (sometimes). Sometimes I sub protein powder for the dry milk. I use whatever odds & ends of cereal, etc that I have on hand - it's a great recipe for using up the little bits left in the bags. I crush the cereal, usually, before adding it. Other add-ins I use are wheat germ, flax, sunflower seats, raisins.

Peanut Butter Balls

1 cup powdered milk
3/4 cup peanut butter
1/4 cup honey

Mix together with hands, cool in fridge for 1 hour. (If you used natural pb that was in the fridge you might be able to roll into balls right away.)

When cool, roll into walnut-sized balls. Store in fridge.

You could experiment with add-ins. And imo, it doesn't need that much honey.
