<p>Last night, we made chili with pumpkin chunks. Tonight, I'm making tempeh shepherd's pie. Also in the works for this week are samosa quesadillas and coconut red lentil curry, and sweet potato black bean enchiladas.</p>

<p>I got so much green stuff in my CSA box this week.  ..it's good, but I am racking my brain trying to think of ways to use it all before it goes bad.  Spinach, arugula, lettuce, bok choy, leeks.  It's harder when I don't feel like eating big salads b/c of the cold weather.  </p>
<p> </p>
<p>And I have a backlog of less perishable things like apples and winter squash that I need to plan to eat. . .I think an apple pie is imminent. <img alt="yummy.gif" src="http://files.mothering.com/images/smilies/yummy.gif"></p>

<p>I made the most amazing lavash wraps with arugula, tofutti cream cheese, tofurky deli slices and leftover homemade cranberry sauce. I don't usually eat a lot of fake meat and dairy, but these were yummy. I also like arugula stirred in to mac and 'cheese' made with this cheese sauce: <a href="http://www.yourveganmom.com/your_vegan_mom/2008/10/vegan-cheese-sauce-mix.html" target="_blank">http://www.yourveganmom.com/your_vegan_mom/2008/10/vegan-cheese-sauce-mix.html</a> and cherry tomato halves. SOOO good.</p>

<p>Spinach I like sauteed over fried tofu in the mornings. And I made a spinach quesadilla with garlic and daiya that is really good.</p>

<p>Dunno about the bok choy or the lettuce.</p>

<p>I think I'm going to borrow the chili with pumpkin idea! Maybe add some kale.</p>

<p>Other dinners this week:</p>
<p> </p>
<p>spanakopita, fruit salad</p>
<p>grilled cheese and tomato soup</p>
<p>baked tofu (in tomato sauce, lemon juice, and olive oil), greens, brown rice</p>
<p>squash, white bean, and apple cider soup</p>
<p>ratatouille and creamy white beans with tomato and grainy mustard</p>
<p>homemade pizza with bocconcini, fresh basil</p>
<p> </p>
<p>baking for the week:</p>
<p>raspberry wheat germ muffins, rye bread, whole wheat and honey pizza crust on pizza day.</p>

<p>I decided to go with a Hanukah theme tonight and make the autumn latkes and chickpea cutlets from Vcon tonight. I think I'll make a green salad to go with, so I can use some of this lettuce.</p>

<p>I've got to finally try some of the daiya cheese, I normally hate cheese subs, but I keep hearing about the daiya, but keep forgetting to pick it up when I'm at WF.</p>

<p>Daiya's good. The trick is to use it really sparingly - an ounce is plenty for a quesadilla made with an 8 inch tortilla, an 8 ounce package is plenty for a 14 inch pizza. Use too much and it gets kind of gross.</p>

<p>Last nights meal was a bust IMO. Took too long to cook, wasn't as tasty as expected, and left me hungry.  I've had such good luck with Vcon recipes, I don't know what happened.  Oh well.</p>
<p> </p>
<p>On to Greek salad for lunch and noodle bowl with bok choy for dinner.</p>

Tonight is sweet potatoes , baked beans and roasted broccoli with rolls. Tomorrow im making chili with cornbread. Also on the list for this week; sweet potato black bean enchilladas, homemade pizza, lentil soup, and stirfry.

<p>I didn't make either of these, a friend did, but tonight was 2 different soups. 1 was veggie sausage, sweet potato, and brussel sprouts. The other was barley and leek. I prefered the barley leek but both were good.</p>

<p> </p>
<p>Mon--wilted spinach salad and homemade applesauce</p>
<p> </p>
<p>Tue--greens and beans soup w/ seeded rolls</p>
<p> </p>
<p>Wed-- veggie stir-fry over brown rice</p>
<p> </p>
<p>Thurs--?? (okay, so not a complete plan, but once I get the CSA box Wed, I'll have plenty to work with)</p>
<p> </p>
<p>Fri-- chili and cornbread (unless there is other CSA stuff I really need to eat first, then this meal will move to the weekend)</p>

<p>Never made that chili, instead on Friday I roasted a butternut squash and then stuffed it with a curried quinoa pilaf. Good stuff!</p>

<p>Last night was yummy--tomato rice soup with chard pie.</p>

<p>Tonight DH and I are fending for ourselves so I'll eat leftovers. </p>
<p> </p>
<p>The rest of this week is a crap-shoot,since I leave for my parents on Sat for Xmas. . .so I'll just be trying to cook with what's already in the fridge and pantry till I go.</p>

<p>It's so amazing, I've never been happy with my breadmaking results before, but the last week and a half I have made some amazing bread. I've used the dough to make boule loaves, pizza with daiya cheese, capers, roasted peppers, and olives, caramelized onion and herb dinner rolls, caramelized onion focaccia, cinnamon rolls, and currently making whole wheat baguettes with garlic and cherry tomatoes on top.</p>

<p>The best part is there is no kneading involved.</p>
<p> </p>
<p>I've also been making a lot of sweet potato fries, since they are in season and I'm trying to eat a little more low glycemic, at least to balance out the increase in bread consumption.</p>

<p>I'm new to this thread and I'm LOVING it!  I'm a fellow vegan Mama with 2 vegan boys (ages 5 and 3).  I'm always searching for new dinner meals that are well rounded and fun!  I have no idea what to make tonight.  I was thinking something with butternut squash, sweet potatoes or lentils.  Now I'm just not sure...This snow is making me want to snuggle under a blanket and procrastinate even more, but these boys are gonna be hungry in an hour~!</p>
