We just received a bushel of local white potatoes from someone Marc works with. I will be able to store some of them, but we're going to need to eat a LOT of potatoes in the next couple of weeks to keep them from being wasted. So far I'm thinking:<br><b><i><a href="http://allrecipes.com/Recipe/Corn-Chowder-I/Detail.aspx" target="_blank"><br></a>Dinners/Lunches</i></b><br><a href="http://allrecipes.com/Recipe/Corn-Chowder-I/Detail.aspx" target="_blank">Potato Corn Chowder</a> (this recipe with modifications)<br><a href="http://allrecipes.com/Recipe/Delicious-Ham-and-Potato-Soup/Detail.aspx" target="_blank">Delicious Ham and Potato Soup</a><br><a href="http://www.worldpantry.com/cgi-bin/ncommerce/ExecMacro/bettes/recipeone.d2w/report?rcrefnbr=115&rrmenbr=33757" target="_blank">Kartoffelpuffer</a> (German crispy potato pancakes)<br><a href="http://www.cheapcooking.com/Recipes/soupleekandpotato.htm" target="_blank">Leek and Potato Soup</a><br><a href="http://allrecipes.com/Recipe/Proper-English-Cottage-Pie/Detail.aspx" target="_blank">Cottage Pie</a><br>

What else can I do with potatoes? Recipes would be wonderful! Thanks! <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/orngbiggrin.gif" style="border:0px solid;" title="orange big grin">

Potatoes store pretty good, espeicailly if they haven't been washed. Just make sure they're in a cool dark place AWAY from onions!! Otherwise... lots of french fries, hash browns, and baked potatoes sounds good to me!! <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/orngbiggrin.gif" style="border:0px solid;" title="orange big grin">

Can them! They store a lot longer that way! <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/smile.gif" style="border:0px solid;" title="smile"> Make up tons of mashed potatoes and freeze them! Twice-baked potatoes, freeze em! Slice 'n dry them!<br><br>
I love potatoes. Love love love. And they're so cheap, and there's so many things to do with them.

I love potatoes too and just used up the last of ours.<br><br>
We do alot of potato sides because my boys love potatoes in any form. Baked, fries, roasted, mashed, scalloped, home made hashbrowns are great too.

Simple hashbrowns, corned beef hash, oven roasted potatoes, I know crash potatoes are pretty popular. I like to roast a whole chicken on a bed of potatoes, onions and apples. There's always baked potatoes (even with little guys, I just use 2 or 3 instead of 1), pan fried, or just boiled and tossed with butter and fresh herbs. Lately my main use for potatoes has been for additional body in soups, stews or curries.<br><br>
I would honestly work more towards making them last than using them up quickly. Stored in a cool dark dry place they can last all winter.
