I got a pasta attachment for my kitchenaid mixer, and I tried it out for the first time last night. I followed the directions in their recipe for pasta (which is just egg and flour and a little water) but I substituted whole wheat flour for white. The noodles came out too sticky and all stuck together; so I added more flour -several times- and the noodles ended up being too sticky everytime. They tasted fine, but were terribly stuck together.<br>
I have made it by hand, rolling and cutting the noodles, and I make them very dry. I am afraid that if I make the dough too dry it will wreck the machine. I thought that this attachment would make it quicker and cheaper to have our own homemade whole-grain organic pasta, but after last night I am thinking maybe I should return the attachments. Does anyone have any good recipes or tricks for making whole grain pasta that work well with a machine, or is it hopeless trying to make it this way?

i had the same problem. i finally found something that worked. i rolled out the pasta dough and then placed it in the freezer until it was kind of stiff, I dont remember how long it took, not too long, an hour? then when it was slightly stiff i put it through the attachment.<br><br>
oh, i would love to make pasta again.....sigh<br><br>
