I use a light oil, champagne vinegar (could use rice vinegar), dijon mustard, parmesan, sugar, salt, pepper to taste.<br><br>
Apparently canola is bad for you around here, so you could use olive oil I guess. I like less strong oil for this though.
If you want a super-infused and flavourful dressing...make this ahead of time and pour it over top right before you leave:<br><br>
3 parts olive oil to one part balsamic vinegar<br><br>
crush 1-2 cloves of garlic<br><br>
salt & pepper to taste<br><br>
Shake it up in a container and leave it on the counter until ready to use.<br><br>
I often will add chopped cucumbers, tomatoes, peppers, olives etc at the end as well <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/smile.gif" style="border:0px solid;" title="smile">
