I am goiing to be bringing home a tree load of peaches from my mom's on Thursday. Any suggestions on what we can do with them? We plan on some preserves, but what else can I do that is not too sugary? Thanks!

They're also great just to eat after they've been frozen...imagine having a dish of fresh peaches in the middle of winter!


Of course, I would save some out to make cobbler and/or pie with, too.

Jarred Peaches

no sugar required

Cut the peaches in half, to remove the pits.
Put the peach halves into glass jars.
Pour boiling water over the peaches, filling jar.
Screw on a sealing lid.
Store in the fridge.

for the jarred peaches:

As long as sterile jars, lids, and utensils are used, the peaches will keep for at least a year, like most canned food, in the fridge. However, they don't ever last that long in my house. I love "canned" peaches.
