Peach butter sounds delicious! I would be freezing alot for throwing in smoothies. A peach smoothie sounds yummy and can take a lot of fruit. Peach berry muffins? Canned peaches?

For the apples and asian pears you can make spiced apple-pearsauce, apple butter, apple & asian pear crisps and pies, cinnamon apple muffins.

Ooh there are a bunch of great peach recipes HERE

I would slice and freeze some, definitely! How about throwing together a bunch of pies and freezing those.

Something I really like peaches in is a savory salsa (with tomatoes and green onion), you could do it on top of fish/chicken, etc. We dip chips in it.

Peaches in salsa are divine!

How about a freezer jam? Something you could pull out later and stir into yogurt or pour over ice cream. It'd be lovely to have peaches in January.

When I was a kid, my mom often made rice with sliced peaches and raisins (or cranberries or dried cherries) in it, cook with milk until creamy, top with more milk and a bit of brown sugar. Yum!!
