Okay - DH can't live without pillows.
I am this total "safety" freak so we co sleep with no pillows, sheets and light blanket to the waist, and, then I wear a PJ top unbottoned with a long sleeve shirt like a turtle neck undreneeth. DS sleeps at about chest height, although sometimes higher. He is 2 months.
With DD my hubby worked nights so it was just me. Now, DH is sleeping on the floor currently on a pillow strike. I would like for us to be able to sleep together, but I am not sure how?
Currently DS wakes twice a night and I move myself around him (one side or the other of him) to nurse. If DH had pillows, my issue would be when he nurses on that side. We have a full bed so it is not very large.

Thoughts? Suggestions?
Oh, and DD sleeps independently, we just acomplished this, so we don't want him to start sleeping with her.

I'm not a safety freak, we're probably sort of bad co-sleepers. We sleep with underfilled down pillows...DH lumps his into a ball under his head. I sleep with mine turned vertically.
My son is almost 3 months old, I have been sleeping with him on his side facing me, while I curl around him with my arm under his head. I feel totally safe. When it's time to nurse, and switch sides, I just hug him to my chest and roll over. All the times I tried to just park him in between us on his back, he'd end up wiggling over and nuzzling up to my armpit, side, breast, whatever. So, I just decided to stop trying to put him between us.

You could try turning the pillow vertically, that way DH has a little cush under his head, and then the bulk of the pillow won't be in your LOs zone. Or, try sleeping with your son the way I do and see if that works.

We used one of those little sleep positioner thingies because ds had reflux. It kept him slightly elevated and it didn't really seem like pillows were an issue with it.
