I am having a potluck with my students as part of their final this evening, and I am trying to think of something simple and snacky to take. Most would appreciate good tasting food, but I do not think they care about healthy or organic as much as I do because someone already volunteered to bring "tiny weenies", which got much of the group excited. Got any good ideas?

7 layer (or any amount of layers) dip.
You don't even have to cook unless you want to. Beans (whole beans, refried beans, black or pinto), salsa, rice, cheese, guacamole, sour cream...some of the things you can put in it. Bring a bag of chips.
Here's how I might layer it: (I would buy beans in a can already seasoned or sprinkle some Adobo seasoning on each layer)
refried pinto beans
rice
salsa
whole black beans mixed with fresh chopped tomato and 1 can corn and fresh cilantro
cheese
(you can bake it a bit to melt the cheese at this stage)
then add a layer of guacamole and then sour cream if you want.

Use a spatula to spread the gooey stuff.
