Ds is anemic and I've bought some chicken livers for him but I really don't know how to prepare them <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/redface.gif" style="border:0px solid;" title="Embarrassment"> I was thinking an unseasoned pate. Should I soak them in lemon juice first or is that a bad idea since citrus isn't recommended until he's older (he's 9.5 months old but about 7 months adjusted for his prematurity). He seems to have reacted to egg in my diet so adding the liver to egg yolk as I've seen recommended is not an option.

I've always heard of soaking liver in milk. Can you pump? Soak them in breastmilk!<br><br>
Beef liver might be a better bet than chicken, though, if you can get it.

Hmm, pumped milk sounds like a good idea. It definitely needs to be soaked because I just sauteed some without soaking and it's bitter. Ds spit it out and got mad. I was the pumping queen (frequency if not quantity) when ds was in the NICU but now that he nurses frequently I don't get much pumping. I'm sure I can eek out enough to soak with though. I'm really hoping he'll eat this because I hate giving him synthetic vitamins and hardly bioavailable iron supplements.

I think you could soak them in anything acidic. It's about the acidity and not about the citrus.<br><br>
I do soak in lemon juice but i rinse before I fry them so maybe that'll help too.<br><br>
Yeah, I tried the liver without soaking and it's no good. Bleh.

none of the chicken liver pate recipes I've seen call for soaking the livers first... maybe this is why my homemade pate is only so-so, but the one I bought was delicious. I'm going to try this and see if it makes a difference.
