Probiotics Chat (Yogurt, Kefir ...) April '06

I thought I would start a new thread for April.

My dd loves yogurt but I have a problem, the only kind she will eat is the crappy gogurt that my mom got her hooked on. I tried to refill the tubes up, but she quickly caught on. Anyone have any ideas on how to get her to eat the good stuff? I am thinking of freezing some into popsicles when it gets warmer out, but need some ideas until then

i am new to kefir and looking for support. i have yet to be able to DRINK it but as we speak i am baking with some. i don't want to quit....just need some support

Have you tried blending fruit into it? I have been blending organic frozen fruit into mine lately. It takes a little of that bite out of it. But just don't use raspberries! They make it more sour. I found that out the hard way.
I drank it though. I wasn't going to waste it.

these are the questions i posted elsewhere, but i would love another set of opinions


i am sure in a smoothie it would taste okay, i just have trouble witht he thought. i am so worried i will make them sick. i live in arizona and it is hot and i let my last bath go almost 48 hours and it was SO THICK (now i used raw organic milk but my 12-24 hour batches did NOT look like that ) i threw that out and started new but now all i hav eis lower fat organic milk (pastueruized)

I am making scones with my saturday finished batch now

can i serve those just fine??

sjould everyone just eat ONE?

can i freeze them?

is the kefir still beneficial?

how much is too much to drink?

how long can the drained out kefir-ized stuff stay in the fridge?

My 3 yo was getting bored with yogurt and never sits still long enough to finish one so I bought some fruit flavored kefir drinks from Whole Foods. She loves it. I'm going to have to learn how to make it because it's getting expensive. We're also reading Charlie & Lola's 'I'm not sleepy and I'm not going to sleep' book where Lola gets pink milk as a bedtime drink so that's made pink kefir drinks very popular around here.

Next time I am going to use a glass mason jar instead of the plastic container it comes with and see how it goes. It's worked very well for me and the most affordable single container maker I could find.
i have been doing the kefir in these two or so cup heavy glass tumblers that i got for 75cents each at IKEA and for 99cents I got four lids that seal the tops (the lids are plastic but the containers are perfect!)
I got my yogurt maker from Amazon too. It's the Salton one and it was about $15. I have never had a bad batch so far either. I wanted to use it for making buttermilk and kefir, but I called the company and it heats to 100 degrees and that's too high, as far as I am aware.
So what about when yogurt and kefir aren't viable options?

I'm finding that even cultured dairy is bothering me. Yesterday was the most pleasant gas-free day I've had in months and I didn't eat any dairy at all.

Now what do I do?

Ive made kefir with coconut milk as well. very yummy, especially in a smoothy with pineapple
Are you using raw milk or pasturized? What exactly are you using for culturing the kefir and for starter in the yogurt? I have actually been making huge improvements lately with raw milk and kefir made from raw milk grains. I have had colitis for nearly five years and absolutely could NOT consume and cow's milk or other dairy products until I finally made the jump to raw. I was scared to death, but nothing else has worked for me, including the yucky meds.

Does anyone worry about food combining? Fruit & dairy together are supposed to be really hard to digest. Do the probiotics help it along?

I am sorry, but I haven't made yogurt in a while, so I haven't used raw milk in it yet.
I've only made raw milk yogurt in it, a la Fallon's NT recipe. Works just dandy!
I don't know where to get raw milk. I've just been using plain ol store bought 2%.
I haven't actually made kefir because I bought some from the store to try first and I couldn't swallow it. It was very UNyummy.


Are yogurt and kefir the only ways to get good probiotic benefits?

Hello all! I need help!

I tried to make yogurt for the first time, and ARGH! It did not turn out.

I used the Salton yogurt maker, with raw milk. Heated the milk to about 110 degrees, then mixed the starter yogurt in and put it in the yogurt maker for 24 hours. When I opened it this morning, it was a mess of mostly yellowish liquid and a small amount of curdy-looking globs of fairly solid stuff which smelled and tasted like yogurt, but ewww. I think it was mostly the starter yogurt maybe. I measured the temperature of the not-yogurt and it was 120 degrees! Yikes!

I'm getting ready to try again, but I wanted to see if anyone here could diagnose my problem or give me any tips. I did note after putting it in that the directions recommended mixing a little of the milk separately with the starter yogurt to blend it well and then mix it back in with the rest of the milk, which I didn't do...I'm thinking that might have been the problem.

Anyway, any tips would be greatly appreciated!
if you are using raw milk even to make yogurt, isn't heating it a no no since it essentially pasteurizes it?

No, first, you're not heating it very high. 110 is recommended for raw milk. Second, pasteurization is a violent process that in a moment heats the milk to extreme temperatures and damages the milk. Even if you took raw milk and heated it higher, it still would be better than pasteurized milk.

OK, made yogurt in this, but in a glass mason jar last night. Looks like it turned out quite well. So for those of you with plastic concerns, this will work great with any jar you have that fits!
That's good to know about using glass jars with the Salton maker, that's the one I have.

I'm trying again...only heated my raw milk to 100 degrees this time and pre-mixed the starter yogurt with some of the milk to really incorporate it well. I will see in just a few hours if it worked! I did peek this morning and it looked like yogurt. Fingers crossed!
