quick banana bread question!

I have a ton of bananas that are getting too ripe and I can't eat them fast enough. I love banana bread. Would it be better to make the bread and freeze it until needed or peal and freeze the banans until I wanted to make the bread!?

I've done it both ways, but if I have time I prefer to bake the bread and then freeze what we can't eat. We all love banana bread, so it is pretty rare that any of it makes it to the freezer, but when we do freeze some I am always thrilled with how good it tastes after thawing. Just be sure to wrap tightly with no air pockets before freezing.
I freeze the bananas, but I don't peel them first. I often have one banana left at the end that gets to ripe, I just toss it in the freezer. When I have enough for a loaf, I bake!

Make bread and freeze it!!! Bananas get brown and squishy when frozen then melted. If the banana bread is in the freezer, you can get it out at supper time, by the time you put the kettle on it will be defrosted enough to slice, by the time the tea is ready the slices will be defrosted. I adore having baking in the freezer.
In my family, we'd freeze the bananas and probably use them in milkshakes long before we got around to baking banana bread!

They do but it makes NO difference if you're using them in bread. They work great and taste wonderful.

Peel 'em, freeze 'em. When you're ready to use, take out and put in fridge or on counter to defrost before using. And another yummy thing is to use the frozen bananas as a base in smoothies OR put them in the food processor, whiz them around a bit, and voila: Lucious Banana Whip!

I'm another throw-the-banana-in-the-freezer-peel-and-all person. I used to make banana bread all the time, but now we seem to use them for smoothies. I actually buy extra bananas each week so I'll have some for the freezer! Doesn't always work though - my household goes through a serious amount of fresh bananas!
Make the bread and freeze that...like a PP said, then you just have to defrost the bread for dinnertime instead of having to bake the whole loaf. Save time.

Alkenny's right, too. I'm a HUGE fan of doubling recipes to freeze some. I do this all the time with b-bread. It takes the same amount of time to make a double batch of just about everything. Of course, you just have to have enough ingredients for two loaves or double whatever. But I very, very rarely make just what a recipe calls for.
