<p>Made these today, munching on them now- yummy!</p>
<p>Roasted Chickpeas</p>
<p>1 can chickpeas, drained and rinsed (or you can use dry that you soak and cook and drain)</p>
<p>Olive oil, sesame oil, or whatever oil you want</p>
<p>Seasonings-</p>
<p>Garlic Powder</p>
<p>Sea Salt</p>
<p>Chili Powder</p>
<p>Paprika</p>
<p>Lemon Juice</p>
<p>Preheat oven to 350. Coat chickpeas in oil, then season. Spread onto a rimmed baking sheet or in a cake pan, bake about 30 minutes or until crispy. I added the lemon juice and extra salt at the end, and they are so good!</p>

<p>I have a recipe for quinoa veggie burgers and I like to make a large batch and freeze them.  They make a quick and easy lunch on some bread with some spinach thrown on for your greens.  I'll post it later, naking right now.</p>

<p>The other thing I made today that is yummy is almond butter balls- basically I put a few cups of almonds into my food processor and added maple syrup, vanilla, and a little oil, and processed for like 10 minutes until it didn't have any big chunks and sort of all clumped up and got sticky. I put it into a jar, but I eat it by just scooping some out and rolling it into balls. I might actually roll it all into balls tomorrow if I get the energy. I'm thinking it will be a good middle of the night snack to try and keep the morning sickness away.</p>
<p>Tomorrow I'm also probably making hummus... although I don't have anything to dip into it right now.</p>

<p>Ok share recipes girls! I love almond butter on pears and eggs with tabasco right now, LOL. I have to watch the carbs and sugars because I usually end up with gestational diabetes.</p>

<p>noahs.mom- I make an almond ball too, I use almonds, tahini, honey, and vanilla.  I keep them in the freezer and have a nice protein snack!</p>

<p>Gestational diabetes here too!  Mostly I just add ricotta cheese to everything, it has a ton of protein.<br>
