GF/DF bread w/ whole food ingredients in 2 min(including mixing time). Uses the microwave but I bet it could be converted. I will be anxious to see if it works w/ an egg replacer as well. I fufilled a blt craving today w/out slaving in the kitchen and w/out shelling out $6 for a loaf of horrible storebought gf bread. I haven't played w/ the ingredients but it will be interesting to see all the different combos that can be come up w/- there are some different substitutions that people have tried on that thread as well.

(I hope I can link this- I didn't want to type it up as it was mine!)

I hope it works well for you CP- it is not gourmet- but have something quick that tastes pretty decent is awesome! I am going to try a cinnamon raisin combo- I was just at a friends house and they were toasting some very yummy smelling cin. raisin ezekiel bread and I was so jealous! Oh- and on the link it has a grainfree recipe as well!

So, I gave it a few tries. No luck with egg replacer (ener-g). One egg sub was too little liquid and two subs was too much. Maybe one egg sub with a couple tsps. of oil would work.

The starches didn't work so well, though tapioca was better than arrowroot. I used them in place of the flax and almond. I tried a rice and sorghum mixture and that seemed to work best.

I didn't like the look of the cocoa. It looked like fake-o storebought "wheat" bread.

Crunchy mama, what kind of flour mix are you using? I need to experiment a few more times, but I was slinging the baby at the time and he got tired of it.

I added a bit of guar gum to one mixture and it made it kind of tough.

Also, the flavor of the bread is really bland. Maybe more salt??

I used the recipe as written the first 2 times
1 egg
2T brown rice
1 T golden flax ground
1 T almond meal
3/4 t sugar(used turbinado)
1/2 t. baking powder
1/2 t cocoa
dash salt

Coated the custard dish w/ coconut oil and cooked 90 seconds and it was perfect.
I just tried it again w/ 1 T sorghum and 1 T brown rice and I didn't notice much difference-
As to the taste I used this for blt's so I was not so much noticing the bread's flavor- although I did try it and thought it was ok- like I said not gourmet- but a great easy vehicle for a sandwich. The texture was good and it stayed together well. I don't know that it is a bread I would eat plain.

Tomorrow morning I am going to try the cinnamon raisin- but I wanted to wait as I think it is better warm.

I haven't tried it w/ egg replacer yet myself- although I need to as eggs are uestionable for me. Although the greatest thing to me is the quickness so you can try it w/out ending up w/ a bunch of waste if it doesn't turn out.

What would you recommend in place of the flax and almond? We're iffy on seeds and nuts, so I need to use something else. Thx.

OH- can you not do flax or almond? So- no seeds or nuts? I would think w/o the egg and no flax or almond you would need extra oil- like you said- the flax and almond give a lot of oil-

On the flavor as well I was thinking it would be good to add some spices to add to compliment whatever you are eating- maybe some cinnamon and vanilla for pb- or sunbutter and jelly- some italian spices for a meatball sandwich. I think as well this would make a great french toast as it is more about the flavors you add. One of the ladies tripled it in and put it in a square dish and then cut it in 4 squares- cutting each in half for 2 slices. I should try that and just put it in the oven and see how long it takes to cook. Since pregnant I am craving so much carbs but I don't have the patience for anything too complicated!

hmm- how about teff- it is supposed to be high fat and have a mucilaginous (so that would certainly help I would think)- This site says it has a bit of a chestnut flavor but I haven't tried it yet- so maybe the taste would translate well to be like the nuts. Coconut flour is high in fat but it requires extra moisture - so you would probably need an extra egg if you used that and that probably would change the taste too much- although with something so small it maybe wouldn't matter so much. Is teff safe for you? I have a bag bought to make some whole grain pitas but haven't got around to it yet- I will give it a go tomorrow and see!

Well- if I wasn't down to my last egg I would do some experimenting right now- I will try to get some tomorrow and see what can be figured out.

Post your results- I will be curious. We don't tolerate oats here and I don't have millet- so I didn't even think of those. I will try it out w/ the teff tomorrow.

I even called the in-laws to see if they had some extra eggs but they don't so it will have to wait- I have now found a donut recipe I am dying to try(I am so pregnant!) so I have to save that egg.

I just made a recipe for gf choco chip cookies from Alton Brown. The dough's in the refrigerator, so I'll make them tomorrow and report. They had a billion awesome reviews. And I love Alton Brown

Oh- I have that cookie recipe on my bookmark to try list- I will be anxious for your results!

We had donuts this am- TO DIE FOR-!!!!! Dh (who eats gf at home but most certainly not away and loves donuts) said they didn't even taste gf/df. I made a quick glaze w/ coconut oil(not melted) cocoa and powdered sugar(I didn't say they were healthy!)

I made these w/ coconut milk - raw honey for the agave - melted coconut oil for oil and pumpkin puree(didn't have applesauce)- it only had a very slight pumpkin taste. They were so yummy had the perfect donut consistency and fluffiness. Also- the recipe was the perfect size as it wasn't too much as it was enough for about 6 donut holes size pieces for each of us.

Here is an egg free recipe I wanted to try as well- I think it could easily be corn free as well- so it is GF/DF/SF/CF and Nutfree.

Back to report--those Alton Brown cookies turned out awesome! The texture and look are amazing My only beef is that I don't love rice flour and it always sort of tastes like plaster of paris to me, still, they taste great. As gf cookies go, these are the best I've ever had.

Maybe I wouldn't lose weight if I could just 2 or 3 of those cookies every day!
