I love to just eat them raw by themselves or in salads. I will also grate or finely chop them into coleslaw

Here's one. We like it best with a mix of red and beauty heart radishes, but I make it with whatever happens to be coming out of the garden:<br><br>
***Better Times Salad<br><br>
2/3 c lentils (I use brown or french green)<br>
1 cup cooked wild rice<br>
1/3 cup finely sliced red radishes<br>
¼ c finely sliced white radishes (I substitute Beauty Heart radishes for the white – they are terrific!)<br>
¼ c finely chopped green scallion tops<br>
2 pickled jalapeno peppers, finely sliced<br>
1 clove garlic, crushed<br>
¼ t salt<br>
2 T lime juice<br>
2 t country-style Dijon mustard<br>
¼ c olive oil<br>
Chopped fresh parsley for garnish.<br><br>
Cook the lentils in boilin, salted water until tender, about 20 mins). Drain and set aside to cool. Combine the cooled lentils with the cooked wild rice, radishes, scallion tops, and peppers in a bowl. Toss well.<br><br>
Using the back of a spoon, mash the garlic with the salt in a small bowl until a paste is formed. Whisk in the lime juice, mustard, and oil. Pour the dressing over the mixture and toss well. Serve at room temp, sprinkled with parsley.
