I have read (I think from NT) that we shouldn't eat raw egg whites, especially when pregnant. Does that mean I shouldn't eat my homemade mayonnaise (it has one whole raw egg in it)? Why is it bad? Can mayonnaise be made only with the yolks?<br>

I don't know the answer to your question, but if it's a concern, you can always pasteurize your eggs by heating them slowly to 140 F. If you get much hotter, they'll start to cook.

I know raw egg white is hard to digest, I think it depleates biotin? (though egg yolks have a lot of biotin, so I don't know if it's a huge problem.) I try to eat raw egg whites pretty sparingly. Really only in egg nog at xmas.<br><br>
Yes, you can make mayo with just yolks. I do it all the time. I've never made it with a whole egg, only yolks.
