Just regular Italian? half vinegar, half oil. Any varieties of vinegar or oil you like (olive oil + balsamic vinegar, corn oil + red wine vinegar, whatever) I usually do more like 2/3 vinegar, 1/3 oil. Then add Italian spices (oregano, basil, garlic, etc.) salt, pepper, a dash of sugar or maple syrup if you like.

1/4 cup extra-virgin olive oil<br>
2 tbs white vinegar<br>
1 tbs fresh lemon juice<br>
2 tsp dijon mustard<br>
1/2 tsp sweetner, optional<br>
1/2 tsp crushed garlic<br>
1/2 tsp dried basil<br>
1/2 tsp dried oregano<br>
1 leaf fresh basil and oregano, minced<br><br>
Combine all ingredients except the fresh herbs and whisk to emulsify. Stir in the fresh basil and oregano. Makes 1/2 cup.
