I want to make a mint chocolate cake. I will be using whole wheat or spelt. I will also be using maple syrup or honey for the sweetner. I may use Cathe Olson's Carob Layer Cake but I'm unsure about how much peppermint extract to use. I'm also unsure as to what to use for frosting? Can I use cream cheese in place of crème fraishe? Cream cheese, honey & peppermint extract mixed together? Does anyone have any recipes for mint chocolate cake?

I don't have any recipes but man that sounds good.

I ended up making a raw carob mint bars. I used Astor mint flavoring (which was a last resort) but I really wanted to use something more natural. It was really good anyways. This probably doesn't help you though.
