Yes, it will be great. Toss it in with the onions after cooking the spices a bit. Summer squash and zucchini make great additions. They are also great in Italian style pastas, pizzas, calazones, and in Asian stir fries.

I like summer squash just cooked down with onions, a bit of water, salt and pepper.

Good as a side dish to chicken. It'd be good in a curry, too.
