Does anyone know of any tasty gentle recipes for a first b-day cake?

I'm making a cake for my nephew. My sister has told me anything flies, but I'm trying to be careful as I know he has not had nuts yet and his daddy is allergic (but won't be at the party).

I plan to cook it in a castle-shaped bundt cake pan, and adults will be part-taking in it too.

I made carrot cupcakes for my DS's bday last week, with a recipe from Cooking Light. It was really good! Had something like 2/3 c. regular sugar and 2/3 c. dark brown sugar, 1 egg and 2 egg whites. Was pretty tame until it came to the cream cheese frosting, which had 3 cups of powdered sugar
But I figured Charlie was only going to have a little bit, and that way the adults could enjoy it too without me needing to make a second "sinful" cake.
