I'm trying to add more veggies to my diet, and I thought adding a veggie or two to a smoothie would be a good way to do it. Anybody have any good smoothie recipes that have veggies in them?

There's a really good smoothie recipe that uses kale. It's by Cathe Olsen in an issue of Mothering . . . I can't get it now but I'll post it when I can--the issue the recipe is in, that is. The recipe goes something like:<br>
2 stalks kale<br>
1 cup orange-pineapple juice<br>
1 banana<br><br>
That's not exactly it but the combo of those fruits and veggies is delicious.

I just do my normal smoothies and add in frozen veggies and kale. So my normal recipe is this:<br>
1 frozen banana chunked<br>
frozen blueberries (about 3-5 big spoonfuls)<br>
fresh strawberries<br>
frozen peas and carrots (3 big spoonfuls)<br>
bit of honey if needed<br>
3 big spoonfuls of plain yogurt (pour in the whey if there is some in container)<br>
little bit of soy milk<br>
2 stalks of kale<br>
brewer's yeast<br><br>
yummy add ins <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/smile.gif" style="border:0px solid;" title="smile"><br>
*coconut<br>
*ground nuts<br>
*peanut butter--if you do this not so many berries and veggies and put in some vanilla<br>
*flax seeds (grind first in blender)<br>
*apples<br>
*fresh carrots<br>
*oranges<br><br>
I made this basic smoothie for my little ones and myself tonight along w/ the coconut addition. I found if I do the kale first it grinds up so nice and then I put the rest in (unless you do flax seeds then do them first then add the kale). What I discovered was if I made the basic yummy w/ the berries I could add an combo of veggies. I've put in green beans, corn, carrots, broccoli and my kids have never known there were there!

Can you taste the spinach? Fresh leaves? Have you ever used spinach in other smoothies?

I don't know about the spinach leaves or stems, sorry.<br><br>
But my Trader Joe's sells Micro Greens, which are a variety of sprouts(one of which is spinach), and I just throw them in my vitamixer with bananas, coconut milk, and kefir or yogurt. Yum! If I feel like having it extra sweet I'll throw in a couple dates, too. Double Yum!

Everything Smoothie<br>
This smoothie is a great way to get a couple extra servings of vegetables.<br><br>
1 cup cold apple juice<br>
1/2 sweet potato (peeled) or 1 carrot, cut into chunks<br>
1 banana (fresh or frozen)<br>
1 orange, peeled and broken into sections<br>
1/4 cup chopped cabbage<br>
2 tablespoons tahini or cashew butter<br><br>
Place all ingredients in blender and puree until smooth.<br><br>
Makes 2 servings<br><br>
Creamy Greens Smoothie<br>
This smoothie surprises everyone because it tastes so good. You really don’t taste the kale at all. This is an excellent snack while breastfeeding because the greens help to increase milk production. Use nutritional yeast flakes fortified with vitamin B12.<br><br>
1/2 cup pineapple juice<br>
1/2 cup light coconut milk<br>
1 banana, sliced and frozen<br>
2 to 3 kale leaves<br>
2 teaspoons nutritional yeast flakes<br><br>
Place ingredients in blender and puree until smooth.<br><br>
Makes 1 to 2 servings<br><br>
Note: 1 cup pineapple-coconut juice can be substituted for pineapple juice and coconut milk.

I haven't tried spinach, but I have made a couple with kale (I just put one leaf/stalk or whatever they're called in a medium single-serving smoothie) and I couldn't taste it or tell by texture it was there. I do have a vita-mix which grinds everything up really well, but I would think a regular blender would do an okay job, too, with spinach--just start out with a few leaves, no stems, and see what happens! GL

I wouldn't worry about spinach stems - I put kale stems in and it's fine - also I use a regular blender and it purees veggies no problem.
