I need recipes for firm tofu. I bought two packages because it was a buy one get one sale on organics. I made a good stir fry with it tonight BUT I need more ideas. I am alone in this endeavor, my Dh won't allow me to "make" the family switch. Please help me.

I use it as ricotta "cheese" for lasagna or other pasta.<br><br>
This is a good recipe for baked ziti. I usually skip the seitan and do chopped veggies. Also, I don't know why they say extra firm silken. It's just extra firm.<br><br><a href="http://vegweb.com/index.php?topic=7891.0" target="_blank">http://vegweb.com/index.php?topic=7891.0</a>

I was going to say for pasta too - I like to mix it with some tofutti cream cheese and make stuffed shells with it, yummmmmm.

We also use silken tofu with pasta--puree it in with tomato-based sauce for a yummy pink sauce.<br><br>
Also in smoothies, dips, desserts, etc.

I use a finer tofu for smoothies but give it ago...you may still need to add a touch of milk product but start just with the tofu and berries and go from there!
