I just Roasted a Chicken, and I have lots of drippings. What can I do with them. I am boiling down the carcass, can I add them to this?
I have more drippings then ever, great chicken cooked at 250, for 4 hours, so juicy and tender. Other than putting them in the dogs food, I am at a loss for what to do.
I am new to this.

. They just look too good to get rid of!

I always add them to my stock or use them as a dip or sauce for a starchy veggie if we are having them at that meal. My mother calles these drippings "essences" and she always saves them separately in the freezer and uses them in soups for extra flavorings. She has all of these old yogurt containers full of essences in her freezer, it's sort of cute.
