We were a camping family in the U.S., but we haven't been that thrilled with the campsites we've seen here (pizza shacks, water slides, etc.)

Has anyone found any rustic camping in Europe? Something more like camping in a state or national park in the U.S.? We're in the Netherlands, so preferably something not too far away (maybe Germany, France, Belgium, Luxembourg, etc.)

The only rustic camping I know of is the one called "wild camping" which is done on state owned land without any comfort measures. I've done plenty of that in Norway. It's a bit hard in Holland since there is little space. In Germany you can usually camp near lakes and rivers or in forests for free. Try asking around for hints.
It's definitely not the same as a State Park, forget that, and most people are not really into that kind of thing anyway around here.
In southern Germany, where I am right now, there are plenty of low key campgrounds, many of them are run by the canoe club DKV, so near water. Maybe they have a web site. These are cheap and without perks, but tents are usually close together during school vacation times.
