I just wanted to share the dinner we had last night. Two nights ago DH made a delicious lamb curry with a tomato-based sauce. He blended the spices himself. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/orngbiggrin.gif" style="border:0px solid;" title="orange big grin"> It was wonderful, but we were left with a lot of curry sauce once we'd gobbled all the tender, delicious lamb.<br><br>
Last night I reheated the sauce, poached a couple of pastured eggs in it, and served it over (soaked of course) shortgrain brown rice. It was the BEST dinner. We both felt wonderful after eating it and DD actually gobbled everything in her bowl - a first!<br><br>
So... if you have leftoever curry sauce after you've eaten all the "good bits" - just add eggs! (Also makes a good "morning-after" breakfast, IIRC <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/innocent.gif" style="border:0px solid;" title="shy"> )
