I just wanted to share the dinner we had last night. Two nights ago DH made a delicious lamb curry with a tomato-based sauce. He blended the spices himself. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/orngbiggrin.gif" style="border:0px solid;" title="orange big grin"> It was wonderful, but we were left with a lot of curry sauce once we'd gobbled all the tender, delicious lamb.<br><br>
Last night I reheated the sauce, poached a couple of pastured eggs in it, and served it over (soaked of course) shortgrain brown rice. It was the BEST dinner. We both felt wonderful after eating it and DD actually gobbled everything in her bowl - a first!<br><br>
So... if you have leftoever curry sauce after you've eaten all the "good bits" - just add eggs! (Also makes a good "morning-after" breakfast, IIRC <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/innocent.gif" style="border:0px solid;" title="shy"> )

That sounds yummy! So now you need to post the basic recipe for the tomato-based curry sauce. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/thumb.gif" style="border:0px solid;" title="thumbs up">

I lurves me some curry. I just got introduced to it recently, and have been craving it. I've lot a lamb curry recipe on my website that I can't get enough of.<br><br>
I love the idea. Can you share your recipe?

I got inspired by your post and made my own lamb curry for dinner<br>
here's how I make it:<br><br>
3-4 TBsp oil<br>
1 med onion chopped<br>
4 cloves of garlic chopped (or more cause we love it)<br>
1 Lb lamb cut up in some form. minced is great<br>
2 tsp ground coriander<br>
1 tsp ground cumin<br>
1 tsp ground garam masala<br>
1/2 ground tumeric<br>
1 tsp grated ginger root (easiest to do if root is frozen)<br>
1 1/2 puréed tomatoe (stick diced tomatoes from a can in the blender?not paste)<br>
salt to taste<br>
1 cup green peas<br><br>
in saucepan that you have a lid for, brown onion in the oil add the garlic and lamb and fry until meat is brown. add the spices fry for 1 min. add the tomatoe purée. stir well. cover, put on low and simmer for 45 min (fold laundry or do some dishes) add peas and cook for 10 min if fresh or 5 if frozen.<br>
serve on rice<br><br>
I think this would work with eggs the next day. you can always make more sauce by adding more tomatoes. All measurements are approx. this is a totally MILD recipe without spicy heat. my kids love it so does Dh.
