Hi everyone....I have a feeling that if I dont get a good variety of foods, meal ideas, then I will revert back to my old ways.....I thought it would be good to share some of our low pt meals or recipes here to help each other out


I just started so I dont have too many yet but one thing i've been enjoying for breakfast is the blueberry bread from Trader Joes....it's 2 pts a slice and sometimes i'll put a little peanut butter and banana and honey on it....so it comes up to about 4 pts all loaded up wtih good stuff


I also made a mexican chicken ceasar salad the other night with boneless skinless chicken breasts (marinated in lime juice and cilantro). It was a mixture of greens, shredded carrots, chicken, feta cheese, salsa (one corn chip crunched up) and some cilantro salad dressing.....It came up to about 5 pts but I had a big plate.....it was really good and filling.

Tortilla soup sans tortillas:

A box or two of chicken broth
A container of fresh salsa
Two chicken breasts
Lime + cilantro

Bring the broth up to a simmer in a large saucepan. Add the chicken breasts, simmer about 15 minutes. Remove chicken and either tear or chop into pieces; replace in hot broth until completely cooked. Garnish with lime and cilantro. I like to have some brown rice on the side.Very yummy, and extremely fast!

If you have a skinny/high metabolism spouse like I do, you can add avocado, cheese, and tortilla chips to his bowl...then everybody's happy.

I'm on the core plan, but i have a sweet tooth. I save my points so i can have dessert. PINEAPPLE CAKE ~1 box of angel food cake mix & 1 can of crushed pineapple, mix together, bake according to directions on cake box. let cool. 1-2 points per serving , depending on the size of the slices.
PUMPKIN SPICE CAKE ~ 1 box of spice cake mix, 1 can of pumpkin & 1 cup of water, mix together then bake. 2 points per serving. My hubby & kids enjoy these served with whipped topping.
