I want to bake some pumpkin cookies, but all of the recipes that I've found call for shortening, and I don't want to use shortening at all, if possible.<br><br>
Are there any healthier options? I read something about using mashed bananas as a substitute, has anyone tried this? How did it turn out?

I just use butter. Or lard. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/lol.gif" style="border:0px solid;" title="lol"> Mmmmm lard....

Do you not want to use shortening because usually it's made with hydrogenated oils? If so, you might want to try Earth Balance shortening--it has no hydrogenated oils and in my opinion works just as Crisco. Or you could just go with a full fat like the pp said.

Butter. In pie crust I use half butter and half Tenderflake because it is much much lower in transfats.

I grew up in a country that did not have shortening. Seriously. Whenever we found a recipe that called for it, we'd substitute butter (or baking margarine EEEKKK).

I want to avoid shortening because I don't do anything with trans fats or hydrogenated oils, also, I'm really cautious about my fat/saturated fat/cholesterol intake.

Then in that case, I'd go with the Earth Balance shortening which you can find at any health food store. It has no trans-fat and will help balance your fat intake naturally.
