I'm looking for a marinade for shrimp. I used to make Italian dressing for this, but since we've cut out all hydrogenated oils, I'm not really sure what to use. Does anyone have a good idea? It is much appreciated!

If you liked the Italian dressing marinade why not just use first cold pressed olive oil, fresh lemon juice, some chopped up onion and garlic and even some white wine. In addition to this mixture, you can add some spices that you like such as basil, dill, mint, salt, and pepper. Let the shrimp marinade for about an hour and it will be quite yummy.

What are you using the shrimp for?

My absolute favourite way to have shrimp is to scewer them on sprigs of rosemary, and then marinate them in olive oil and garlic. Then grill them. Ohhhhhh so good. (My brother is a chef, and I stole this from him.) You need large shrimp for this though, so it can get expensive.

In pasta, I fry them up in olive oil with garlic, basil and red pepper flakes. Then mix in some parmasian cheese and mix all together with cooked pasta. Also yum.

And then there is the good old standby of butter and garlic.

Clearly I like shrimp with garlic!!

I don't use any marinade at all. I dissolve about 2 tbs of kosher salt in warm water about a 1/2 cup or so and pour it over still frozen shrimp and add enough cold water to cover and let them defrost and brine while I get everything else ready for what I'm making. Then I rinse them off and use them in the recipe. I tend to do a freestyle shrimp scampi recipe or cooking in the final stages of a marinara sauce.

I like to make Margarita shrimp. Marinate in a blend of tequila, orange juice and lime juice with a touch of salt. Grill them or sautee them and serve them fajita style with veggies.

I have a friend who marinates her shrimp in a cilantro "pesto" (cilantro, olive oil, garlic).

I have a recipe for a marinade that basically has some olive oil, lemon juice (small amount), lemon zest, minced garlic, and chopped basil. It's yummy! Just don't marinate it too long (I usually do 30 min - 1 hour) or it will cook the shrimp.
