Freezing in mason jars is fine as you leave some space at the top to allow room for expansion.

Now what kind of sauce are you freezing? Tomato sauce freezes fine. Mayonaise does not.

No, it's just that my uncle makes homemade tomato sauce every year from his garden, and freezes the sauce. Tomato sauce is an example of a sauce that freezes beautifully. Cream sauces (like macaroni and cheese) also freeze well.

Mayonaise gets a weird texture when it's frozen and defrosted. Yes, I've tried it out, but I don't have an exciting story behind it.

If I've inspired you to write an interesting story involving mayonaise, tomato sauce, and a freezer, I'd love to read it!!
