I have never seen soy-free tofu for sale.
Miso Master makes a chickpea miso
South River Miso has two or three soy-free misos and very infrequent, limited runs of gluten-free miso tamari. I just ordered some a few weeks ago, but it looks like they're out right now. You just have to keep up with checking the site.
Oh, and I made chickpea-based tofu once. Never again. I'm about to gag just thinking about it. I love chickpeas, but this stuff was nasty. And I was really looking forward to it.
It tasted like metal, with the sliminess of slugs and slime mold and other craptastic things.
