I live in PR. It's always hot, and usually humid. Now, I buy potatoes, and they are usually wet in the bag (kinda damp). Now, the bag says to store in a cool, dark, dry place. I can do the dark, but the cool and dry ain't happening. Needless to say, I've had to throw away about 5 lbs of potatoes because they were moldy and going bad. What can I do with the potatoes so they don't go bad? TIA

Dry doesn't happen around here either, so I can only expect potatoes to last 2 weeks tops.

The one thing I haven't tried is putting them in a cloth bag and stashing them in the fridge, since my fridge is usually too full to contemplate a bunch of potatoes.

I stored mine in the bottom drawer of the refrigerator. They still don't last as long as they would in a more temperate climate, but it did mean not having to throw out so many potatoes. It is a it hard to find room for a 5 lb bag, though, so I got in the habit of buying smaller or splitting a bag with my neighbor.

Potatoes do better if they are not touching (one bad potato ca wreck them all). This is a bit of a pita, since lots of potatoes can take up a lot of space. Take them out of the pastic as soon as you get them and check each one-- compost any that are rotting/soft. If you can store them in a large crate or basket (or on a shelf in the fridge, if you happen to have room) and give them some space, they will last much longer. Also, keep them away from onions, as together they give off a gas that leads them to rot.
